What I Eat In A Day
Between classes, workouts, and everything else on my calendar, food is less about perfection and more about energy. Here’s a look at what I eat in a day to stay fueled, focused, and feeling my best

Breakfast/Brunch
On this day, I was out of the house early, so it was a real breakfast. Most of the time, I eat a brunch around 10 because I have class from 11-2. Having class during lunchtime can be hard to navigate, but I like to eat something higher in protein to keep me fuller longer.
This has become a go-to meal for me because it’s easy and delicious. I usually cook two or three eggs and add spinach, then put them on a piece of toasted sourdough with a bit of mayonnaise. The bread is easy to digest, gut-healthy, and helps slow the rise in blood sugar, allowing for sustained energy. The spinach is packed with nutrients and antioxidants and supports digestion. I absolutely love this meal and honestly eat it at least three times a week.

Snacks
For snacks, I usually go for something simple, portable, and nutrient-packed. On this day, I had a vanilla Oikos yogurt with protein granola and fresh strawberries when I got home from class. The yogurt is high in protein to help keep me full and support recovery, and also provides probiotics for gut health. The granola adds extra protein and fiber to stabilize blood sugar and keep my energy steady. The strawberries give a boost of vitamin C and antioxidants to support immunity and overall health. On other days, I might grab something like a GoGo squeeZ or a protein bar, both easy, nutritious options for staying fueled between classes. I try to stick to stuff I know I enjoy because it will satisfy me until dinner.

Dinner
That night, I used what I had at home to make dinner. I try to use up my food to save money and avoid waste. I air-fried some frozen chicken bites and made a Caesar salad on the side. The chicken bites are a quick source of protein, and the salad adds greens and fiber. It wasn’t fancy, but it was filling and worked with what I had. Meals like this show me that eating well in college can be simple and affordable if I make choices that fit my schedule and help me feel good.

Drinks
When I don’t get enough sleep, I need other ways to boost my energy. This day, I needed something before class, so I stopped at 7Brew and got a sugar-free 7Energy with blackberry, white chocolate, and cupcake flavors. Picking a set day to buy coffee helps me save money and cut back on how much I drink. I also try to finish two 40-ounce water bottles each day to stay hydrated.
In the end, what I eat each day isn’t about being perfect or following strict rules. I focus on fueling my body in a way that works for my schedule, budget, and life as a college student. Some days are different, and that’s fine. Paying attention to balance, enjoying my food, and listening to my body has helped me feel more energized and less stressed about eating.
Be Well, Auburn.
