Quiche
Quiche is a savory tart made of eggs, cream, and various vegetables or cheeses baked in a pie crust. It's delicious, easy to make, and seems much more impressive than it is. I love using quiche for meal prep because it can be served hot or cold, be eaten for breakfast and lunch, is filling and healthy, and holds extremely well. The best quiche is made with homemade pie crust, so if you have the time to take this extra step, I encourage you to do so. If not, a store-bought pie crust works great too!
Step 1
Preheat your oven to 365 degrees. Prepare your pie crust in its tin so you don't have to worry about it later. Grate 1 1/2 cup Gruyere cheese, set aside.
Step 2
In a small saucepan, steam one cup broccoli with a splash of water until it just begins to soften. You don't want to have mushy broccoli, so make sure it's still pretty firm when you take it off the heat. Set aside.
Step 3
Chop a whole package of bacon into one-inch-long pieces. Put in a cast iron and begin cooking on medium low heat. It is important the bacon does not get crispy, so keep an eye on it. When done, transfer to a bowl, turn off the heat, and keep the grease! We will use this for the next step.
Step 4
Roughly chop 4 shallots. After chopped pour shallots into the cast iron skillet with bacon grease. Cook on medium heat until translucent.
Step 5
While shallots are cooking, pour 1/2 cup milk, 1/2 cup heavy cream, and 5 eggs into a bowl. Add 1/2 tsp pepper and 1/2 tsp salt. Mix until just stirred. Be sure not to whip any air into the mixture. Set aside.
Step 6
Remove shallots from heat and place them into a bowl. Gather all your ingredients and pie crust to prepare for assembly!

Step 7
Add shallots to bottom of pie crust, spread evenly. Next, add broccoli, most of the cheese, then bacon. Pour the egg mixture evenly across the crust and ingredients until all areas are coated. Add the remaining cheese and admire! Your quiche is now ready for the oven.
Step 8
Place the quiche in the center of the oven and bake for 40 minutes. Your pie crust should just begin to be a golden brown.

Step 9
Take your quiche out of the oven and let it set for at least 25 minutes before cutting. Once it's set, slice, serve, and enjoy!
